I have refined this delicious this recipe so you get the perfect amount of crispy on the outside and soft in the middle.

Ingredients
2 cups self rising gluten free flour
3/4 cup almond flour
3/4 cup tapioca flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
2 large eggs or 2 *chia seed eggs
2 cups almond milk
2 tablespoons apple cider vinegar
1 cup coconut oil melted
1-2 teaspoons pure vanilla extract
4 tablespoons maple syrup

A drizzle of maple syrup, a good squeeze of lemon juice (don’t dis the lemon until you try it), a mountain of berries and a dollop of plant based yoghurt.
Method
- Combine apple cider vinegar and almond milk and let rest
- In a large bowl combine dry ingredients
- Add milk mixture, eggs or chia eggs, maple syrup, vanilla extract and coconut oil, then beat till smooth.
- The mixture should be thick but not stiff, a little more milk may need to be added for a texture that can be poured.
- Pour a portion (according to the recommended amount for your machine) of the batter into non-stick waffle machine. The first one may stick little so remove carefully.
- Stack with your favorite toppings and devour.
*A chia seed egg is an egg alternative made using chia seeds and water to make an egg-like gel.
